The cream production process involves separating the “milk” that contains lactose and sugar from the “cream” which contains the milk fat. Cream typically contains around 35% fat.

What are Soft Peaks?
Soft peaks barely hold their shape. This results the whipped cream to be soft enough to fold into the other ingredients easily. Therefore when the beaters are lifted, the peaks flop over immediately.
Medium peaks hold their shape slightly better. However the tip of the peak curls over on itself when the beaters are lifted.
Stiff or firm peaks hold better when the beaters are lifted as they stand straight up.

Yes, simply store the cream in an airtight container or cover bowl with plastic cling film and refrigerate for up to 3 days.

300 ml heavy whipping cream ½ tsp vanilla extract 2 egg yolks 75 g dark chocolate
- Add the vanilla to the double cream and whip with a whisk, hand or stand mixer.
- In a separate bowl whip the egg yolks
- Chop or break the chocolates into small pieces. Melt the chocolate in a saucepan.
- Add the chocolate and egg yolks to the whipped cream and mix to a smooth texture
- Spoon into 6 glasses or ramekins.
