Cooking & Baking with Almond Flour
Almond flour is lower in carbs and higher in fat. However almond flour is higher in calories. In most cases you can replace wheat flour at a 1:1 ratio. So simply replace wheat flour with almond flour. Almond flour can cook quicker than wheat flour, so it would be best to shorten baking time or lower the temperature. Almond flour lacks binding and other ingredients like eggs, xantham gum will be needed to help bind the ingredients together.
What is Xantham Gum?
It is a must have with keto baking and helps to bind the ingredients. It is the perfect substitute for corn starch and gluten found in wheat flour. Remember a little goes a long way, in general you should never add more than 1 tablespoon of xantham gum to keto baking. Typically use 1/4 teaspoon of xantham gum for 100g of almond flour. Although this will differ depending on the desired texture.
How Many Slices?
16 slices, but remember low carb keto bread is lower in carbs but higher in calories. So a couple of slices is a lot more filling than traditional bread.

Tips to Make Almond Flour Rise
Unfortunately almond flour doesn’t rise as easy as wheat flour. You don’t want to fall flat, so here are some tips to make your bread rise.
Fresh Baking Powder Make sure the baking powder is fresh and not out of date. To test add 60ml of boiling water to 1/2 teaspoon of baking powder, if it bubbles it’s good. If not get rid of it.
Room Temperature Eggs Cold eggs will make your dough colder and will take longer to cook and this could disrupt the effectiveness of the baking powder.
Frothy Eggs Beat eggs with a mixer, blender, beater or whisk until they are light, frothy and evenly coloured.
How to Store Keto Bread
Leave to cool down at room temperature. Once cool, place the loaf into an airtight container or slice it up and pop them into zip bags. It will last in the fridge for up to 10 days.
Keto Almond Bread Ingredients
200g Almond Flour
6 Large Eggs
2 tbsp Coconut Oil
1 tsp Xanthan Gum
1. Preheat oven to 220C/425F/Gas 7
2. Put the almond flour, eggs into a bowl and mix on high
3. Melt the butter
4. Add the melted butter, xanthan gum and cocunut oil to bowl and continue to mix until smooth
5. Pour in 8 inch x 4 inch (20 cm x 10 cm) loaf pan lined with baking paper
6. Bake for 40 minutes
7. Slice into 16 slices and store in an airtight container or zip bags. Store in the fridge for up to 10 days
